Great rice paper rolls require a chewy skin and a good filling. The rice paper rolls at Thanh Ha ticks both boxes with a chewy just moist rice paper wrapper and a filling of shredded lean pork and pork rind with enough shredded lettuce to make it moist. The requisite sprinkle of ground toasted rice gives the pork rind a nutty toasty flavour, and the shredded shiso leaf and mint lends sophistication to a simple snack.

The Cambodian Rice Noodle Soup is also good with lean pork, heart and liver all poached whole to perfection and then sliced thinly so that each of the stringy, chrunchy and floury textures hold their own. Added to this is a scattering of rendered cubes of pork fat for some extra porky flavour. Yum! It almost makes the slice of calamari and peeled prawn extraneous.
